Processor

I have experience now with Cypress PSoC chips, but I may have to stick to something smaller for power consumption.

The TI MSP430 has an "integrated LCD controller" and is extremely low-power.

1.1" Color 128x96 - $1 on Sparkfun

Color LCD for phone - $20 on Sparkfun. Tons of documentation, so getting this up and running would be a cinch.
